Campbell’s Green Bean Casserole

This crowd-pleaser has been around for over 60 years. The home economics department of the Campbell soup company invented the simple dish in 1955. Led by Dorcas Reilly, the team’s goal was to invent a quick recipe using two common ingredients present in any American household at the time: Campbell’s cream of mushroom soup and green beans. Initially, the company did not approve of the finished product, but thanks to Reilly’s perseverance, the dish eventually became known as the era’s ultimate comfort food. The Campbell soup company developed and sold their cream of mushroom soup in 1934. Back then, people used it as a casserole filler and often referred to it as the “Lutheran binder.”   The popularity of Reilly’s recipe immediately skyrocketed. In fact, the company has estimated that since its release, around 40% of cream of mushroom soup sales go into making green bean casserole. Reilly submitted her recipe to the National Inventors Hall of Fame in Akron, Ohio, in 2002. Thirteen years later, she passed away in Camden, New Jersey. She was 92.

How to Make Campbell’s Green Bean Casserole

This recipe only takes around 10 minutes to prepare and 30 minutes to cook. Because it stores nicely in the fridge, you can either make it on the day of your party or ahead of time! 

Ingredients

Campbell’s® Condensed Cream of Mushroom Soup. 

It’s thanks to this thick and creamy soup that this dish is so tasty. For a lighter version, you could use Campbell’s® condensed 98% fat-free cream of mushroom soup as an alternative. Also, if you don’t like mushrooms, you can use any cream soup instead.

Cooked cut green beans.

You can either choose fresh, canned, or frozen green beans for this recipe. If you use canned, you’ll get a softer casserole. If you use frozen or fresh, you’ll get crisper beans.  To prepare frozen or fresh beans, boil the beans for about 5 (for frozen) and 8 (for fresh) minutes, or until they’re tender and crisp. 

Milk.

Milk makes this casserole even creamier. Aside from milk, you can also add cheddar cheese for that extra flavor! Better yet, you can upgrade this element and make a mushroom Alfredo sauce.  To make mushroom Alfredo sauce, saute the mushrooms and garlic in butter until they are golden. Add flour and stir for one minute to create a roux. Pour in milk, vegetable stock, and parmesan cheese. Let it simmer until it thickens. Season with salt and pepper, and it’s done! 

French’s® French Fried Onions.

This is such a crucial ingredient to the dish that sometimes people call it “French’s green bean casserole.” They’re great not just for this recipe, but for other soups and burgers as well. You’ll need to add the fried onions in and on top of the casserole. But, if you can’t find French’s® French fried onions, you can make them from scratch instead. To start, slice some onions very thinly. Then, combine olive oil and butter in a pan. Fry the onions for 2-3 minutes or until they are partially cooked. Transfer them to a bowl. In your pan, add butter and panko bread crumbs. Cook for 2-3 minutes or until the crumbs are golden. Add the crumbs to the bowl. Season with salt, pepper, and parmesan. 

Soy sauce and ground black pepper. For that salty and spicy flavor.

What to Serve with Green Bean Casserole

Green bean casserole is such a versatile side dish, you can pair it with anything! For me, though, it’s the best side dish for Thanksgiving turkey. It’s also great with mashed veggies – like potatoes, sweet potatoes, or cauliflower. Or, how about a fresh crunchy salad to contrast the softness of the casserole? If you want to turn it into a main dish, why not pair it with a cup of steamed rice?

Recipe Variations

While Campbell’s® green bean casserole is already yummy enough as it is, you could also make some variations to suit it to your taste and preferences. Here are a few wonderful ideas: 

For a bit of flavor, add half a cup of chopped red pepper to the casserole. The combination of red and green also adds a festive touch to the dish!If you’re an avid fan of cheese, skip the soy sauce and add half a cup of cheddar cheese to the casserole instead. Gouda, feta, goat, and bleu cheese are also fantastic options.If you’re on a gluten-free diet, use gluten-free panko breadcrumbs if you’re making homemade crispy onions. If you’re a vegan, use plain plant-based milk (such as almond) instead of regular milk. If you want your green bean casserole extra spicy, top it with some diced jalapenos. You could also add some red pepper flakes or Cajun seasoning to the casserole for some extra kick.Bacon tastes great with everything, and green bean casserole is no exception. Fry up some bacon bits and use them to top the dish. You could also use the grease to fry your onions. Yum!

How To Make Green Bean Casserole Ahead of Time

Hosting a party can be quite overwhelming, so you’ll need all the help you can get. That’s why this recipe is excellent for parties. You can make it ahead of time. Just follow the first step and cover the casserole with plastic wrap or foil. You can refrigerate it for up to 24 hours. Then, when your guests are about to arrive, pop it in the oven and bake as instructed.

Storing and Reheating Instructions

While green bean casserole is a side dish, it’s often the star of every party. It’s unlikely you’ll have leftovers, but if you do, you can refrigerate it in an air-tight container for three days. To reheat, cover the casserole with aluminum foil, then pop in the oven for 15-20 minutes at 350 degrees Fahrenheit.  Click on a star to rate it!
