2. Sauteed Carrots with Scallions and Thyme

Feel like “sweet and spicy” shouldn’t describe carrots? Try these herb scallion- and thyme-covered carrots instead.  They’re garlicky, earthy, and 110% delicious. Even the kiddos will love them.

5. Carrots Au Gratin

Trust me on this: anything you can do with potatoes, you can do with carrots. Remember Samwise’s love of potatoes? Boil ’em, mash ’em, stick ’em in a stew!  You can do all those things with carrots, too. Don’t believe me? Check out this recipe for carrots au gratin. They’re cheesy, buttery, garlicky, and vegan-friendly! That’s a hard dish to beat.

6. Cracker Barrel Baby Carrots

When it comes to glazed baby carrots, Cracker Barrel makes the best. With this recipe, you can, too! 8. Honey Balsamic Roasted Carrots

Put the words’ honey’ and ‘balsamic’ in a recipe, and I’m sure to love it. These gorgeously glazed, juicy carrots are no exception.  They have a sweet, tangy, and herb flavor that’s out of this world. They’re also simple to make, using fewer than 10 ingredients. Try this recipe if you need a carrot side dish for any meal.

9. Carrot Slaw with Cranberries, Toasted Walnuts & Citrus Vinaigrette

I’ve highlighted several ways you can use carrots already. But one way they often get overlooked is in a slaw. When most people think of slaw, they picture cabbage.  This carrot slaw is brighter, prettier, and, in my opinion, tastier. It’s a sweet, zesty slaw packed with typical Thanksgiving ingredients. (Carrots, cranberries, walnuts, etc.)  Give it a try the next time you’re not in the mood for typical cabbage slaw.

10. Rosemary Roasted Carrots

Best of all, it’s naturally gluten-free and vegetarian-friendly. So just about anyone can enjoy it!

14. Roasted Brussels Sprouts and Cinnamon Butternut Squash with Pecans and Cranberries

I made this colorful, flavorful dish last Thanksgiving, and it was a hit. There wasn’t a single bit of it to bring home. Everyone from the youngest kid to the oldest great-aunt loved it.  It has so much flavor, and the mixture of textures is delightful. There are crunchy pecans, crisp sprouts, chewy cranberries, and soft squash. It’s incredible till the last bite.

15. Maple Roasted Butternut Squash with Cranberries and Pecans

If Brussels sprouts aren’t your thing, try this recipe instead. It’s still entirely festive with butternut squash, pecans, and cranberries. However, there’s not a single sprout in the mix.  It’s sweet and tangy with plenty of cinnamon and brown sugar yumminess.

16. Roasted Butternut Squash with Goat Cheese

Butternut squash has a natural, earthy sweetness. It tastes great, but by itself, some people find it bland. Jazz it up with some tangy goat cheese and tart pomegranate arils. It’s a colorful, festive side dish showcasing butternut squash in a new light.

17. Roasted Pumpkin

Pumpkins are a Halloween staple. But they’re pretty important at Thanksgiving, too. It might not be the time for carving one up, but you can certainly slice it and roast it!  Add maple syrup, cinnamon, and brown sugar, and you’ll have a real hit on your hands.

19. One-Pot Stove-Top Pumpkin Mac and Cheese

Add a little pumpkin flair to everything this year, including your mac and cheese!  I know! I know! Pumpkin mac and cheese sounds like you’re taking things a step too far. Surprisingly, though, it’s good.  It’s still as creamy and cheesy as ever. The pumpkin just adds another depth of warm flavor. It enhances, not masks, the dish’s overall yumminess.

20. Pumpkin Soup

27. Jalapeno Corn Muffins

No big family meal is complete without bread. And yes, I know this is a list of Thanksgiving vegetable side dishes. That’s why these bread recipes contain veggies!  Let’s start with these jalapeno corn muffins. They certainly add a bit of heat to your Thanksgiving dinner.  They might not be the prettiest item on the table. But what they lack in appearance, they make up for in flavor.  They’re spicy, zesty, and downright delicious. Plus, you can have them ready in less than 30 minutes.

28. Harvest Vegetable Bread

This warm, filling bread loaf is overflowing with veggies. You make it with mashed potatoes, onions, tomatoes, zucchini, and more!  It’s a vegetable-packed bread that tastes and smells fantastic. Serve it straight from the oven with a bit of butter. People might not even want anything else.

These cheesy, oniony biscuits are another bread dish that’ll steal the show.  Be sure to make an extra batch or two when making these. Otherwise, a fight may break out before you even serve dinner!

30. Buttery Cornbread

This crumbly, buttery cornbread features actual corn kernels. They add a phenomenal sweetness to the bread, making it a hit with everyone who tries it.  Unlike some cornbread recipes, it’s pretty easy to make, too. It shouldn’t take more than 35 minutes to prepare and bake.

31. Irish Mashed Potatoes (Colcannon)

Irish chefs have a lot of good stuff going for them. The myriad of potato recipes they have is definitely one of them.  Try this colcannon recipe if you want the best mashed potatoes you’ve ever had. These are the most phenomenal potato wedges ever. They have crisp skins and tender insides and are perfectly seasoned.  There’s more than just salt and pepper on them, too! You also add onion powder, garlic powder, and a little parmesan cheese.  You haven’t had potato wedges until you’ve had these potato wedges.

33. Cheesy Bacon Ranch Potatoes

Ranch-flavored potatoes smothered in bacon and cheese. Does this dish really need any more of a description than that?

34. Potatoes au Gratin (Dauphinoise)

You’ll never want boxed au gratin potatoes again after trying this recipe. It’s cheesy, buttery, and will melt in your mouth.  I make two baking dishes full of these every year. And every year, I bring home two scraped-clean baking dishes without a single leftover.  Honestly, I’m a little salty about that. I started making two helpings so I could enjoy them for a couple of days. sigh The best-laid plans…

35. Scalloped Potatoes

These scalloped potatoes are almost as good as the au gratin ones above. The only real difference is that these are cheese-free. Take your pick, really. You won’t have any leftovers of these, either.

36. Savory Mashed Sweet Potatoes

Is it even Thanksgiving if you don’t have sweet potatoes on the table? I don’t think so, so let’s check out a few of my favorite sweet potato recipes now.  These savory mashed sweet potatoes are easy to make and even easier to devour. They’re fluffy, herby, and extra garlicky.  They’re much healthier than the brown sugar- and marshmallow-packed casserole, too!

41. Paula Deen’s Corn Casserole

I love the fluffy, compact texture of corn casserole. Unfortunately, sometimes it can be a bit dry. That’s not the case with this corn casserole recipe. It’s sweet, cheesy, and perfectly moist.  It’s a spectacular buttery casserole that everyone will love, especially the kids! And it only takes about 10 minutes of prep work. It’s hard to argue with that.

42. Holiday Roasted Vegetables

Why choose a single holiday staple when you can have many? This roasted veggie dish combines onions, carrots, sprouts, cranberries, and more.  It features a combination of flavors and textures to enjoy. 43. Creamy Garlic Parmesan Brussels Sprouts & Bacon

This creamy Brussels sprouts dish is unlike any sprouts recipe I’ve ever tried. It’s full of cheese, garlic, bacon, and more. It’s ridiculously flavorful and entirely comforting.  You’ll barely even realize you’re eating Brussels sprouts.

44. Roasted Brussels Sprouts with Balsamic Vinegar & Honey

On the other hand, these crispy, crunchy veggies are 100% Brussels sprouts. You give them a sweet and tangy flavor, but they’re sprouts through and through.  Even so, the honey and balsamic vinegar ensure they’re extremely tasty sprouts.

45. Air Fryer Brussels Sprouts

Want to make Brussels sprouts the quick and easy way? Toss them in the air fryer! And thanks to the mustard, mayo, and maple syrup, they still have a ton of flavor.

46. Roasted Crispy Brussels Sprouts (Shredded)

This recipe’s author claims, “Roasting and shredding Brussels sprouts is the only way to eat them.” I don’t know about that, but it’s definitely in my top five favorite ways of cooking them. The process is easy and convenient. And the resulting sprouts are unbelievably crunchy, more like chips than veggies. Try this recipe to get your kids to eat more greens.

Whole roasted cabbage wasn’t something I thought I’d enjoy. Boy, I’ve never been so happy to be wrong about anything! This vegan dish has it all!
