We all know chicken is the ultimate dinner protein. But what about zucchini? Zucchini has plenty of essential vitamins, and it’s high in fiber. Pair chicken and zucchini with these tasty chicken and zucchini recipes, and you have the ultimate dinner dish! If you don’t have a zucchini spiralizer—get one! These satisfying recipes often call for those noodles to be spiralized, and cutting them by hand is a fool’s errand (been there, done that). Whether stuffed into a zucchini boat, spiralized into noodles, or roughly chopped into a soup, these recipes will be a big hit.

1. Chicken Zucchini Stir Fry

This stir fry recipe is an excellent option if you want a filling dinner that’s lower in carbs and packed with Asian flavors. It’s super simple, and you likely have all of the seasonings you need right in your pantry.

If zucchini isn’t your favorite veggie, but you’re trying to like it (because it’s a nutritional powerhouse), this Tex Mex recipe is worth checking out. It’s packed with potent seasonings and plenty of cheese that marry well together.  Plus, it’s loaded with additional protein from black beans and flavor from peppers and onions. It tastes like spicy fajitas cooked together in one big bowl! It’s a great low-carb meal that’s insanely filling and sneaks in a few veggies under all that cheese. 

6. Italian Chicken Zucchini Boats

The colors are bright and vibrant, and they taste like summer on a plate.  Plus, it’s super easy and only requires you to fire up the stove to cook your chicken. Once cooked, toss with pecans, grapes, cabbage (for added crunch), rosemary, and creamy Greek yogurt.  Top sliced zucchini with your chicken salad and serve.

This dish is incredibly satisfying, and it’s easy to freeze leftovers (if there are any!).

This recipe pairs all the things I love: buffalo flavors and boats. It’s low in carbs, high in flavor, and incredibly easy to make on a weeknight.  If your family is reluctant to eat their veggies, turn those vegetables into a boat! Pair them with a chopped salad or coleslaw, or eat them on their own. 

22. Caldo de Pollo Recipe (Mexican Chicken Soup) 

It doesn’t get much better than this rustic Caldo de Pollo soup. All veggies are roughly chopped and thrown into a stock pot to simmer for hours. It’s free of dairy, gluten, and any heavy sauce. Go ahead, grab a second (or third) bowl.  To amp up the flavor of this simple dish, bone-in chicken is a must. While lean chicken breast is a healthier option, it won’t add extra flavor. Since this dish is so simple, white meat chicken won’t do. 

23. Panda Express Kung Pao Chicken Copycat   

Panda Express is great, but sometimes you don’t want to make the drive. This copycat Kung Pao Chicken recipe captures all of the flavors of this popular dish without all of the driving.  The thinly cut chicken marries perfectly with the sweet, spicy, and salty Kung Pao sauce. Without this amazing sauce, it’s just chicken veggies.  While it’s technically healthier than takeout, it’s not a light dinner. To keep the calories low, use half as much sauce and skip the rice.
