Melted cheese in between two slightly crisp tortillas is my kryptonite. It’s the first thing I want from a taco shop and the simple dinner I’m always happy to make each week. Aside from the cheese, the other great thing is you can stuff them with anything you want. Philly cheesesteak? Check. Spinach and artichoke dip? You bet! Of course, you can never go wrong with the classic and stick with all cheese. From classic cheese to loaded chicken fajitas, these are all the enticing ways you can satisfy your yearning for a quesadilla.
1. Air Fryer Quesadillas
These air fryer quesadillas are about as easy as cooking gets. Layer refried beans and cheddar cheese in between two tortillas, then let the air fryer to the rest. They taste like a bean and cheese burrito, except slightly less messy. If you want extra fillings, add those in, too. There’s really no right or wrong way to make these.
2. Chicken Quesadilla
Kids love chicken quesadilla night, and so do I! It’s a protein-packed meal that doesn’t require a knife and fork. It’s also a great recipe for leftover chicken. Mayo makes this cheesy favorite extra creamy and hot sauce adds in a fiery kick. If you can’t do spicy, leave the hot sauce out. You can also sub the mayo for sour cream if you prefer.
3. Chicken Fajita Quesadillas
Chicken fajitas and quesadillas are a supreme mashup of Mexican cuisine. And this one is full of Tex-Mex flavors. Sauteed bell peppers and onions are a must when filling the inside. Also, a store-bought fajita seasoning mix will cut down on some of the work. Food this scrumptious would cost big bucks at a sit-down restaurant. But it’s even better at home because you can tailor it to your taste.
4. Cheese Quesadilla
One of the easiest recipes featuring tortillas is this cheese quesadilla. A handful of cheddar cheese, a couple of flour tortillas, and boom, food is ready. While you may not need a recipe, this one tells you how to get the perfect golden brown effect as well as some fun variations. I tend to go with pico de gallo and hot sauce if I decide to add something. But really, this cheese quesadilla is so perfect, you won’t need it.
5. Easy Veggie Quesadilla
Need to sneak some veggies into dinner? It doesn’t get any easier than this. Saute whatever veggies you have on hand, then layer them on a tortilla with black beans, Mexican cheese, and a handful of cilantro. The only way you can pack more flavor into this is by topping it off with salsa and sour cream. If you do have the time, try roasting your veggies. It adds yet another layer to this colorful fiesta.
6. Philly Cheesesteak Quesadilla
Do you ever feel like splurging at a restaurant with the most ridiculously cheesy carb-loaded app? Well, now you can splurge at home instead. The inside of this is oozing with Philly cheesesteak staples. But by no means should you use lesser quality meat. Indulge and stuff these beauties with quality ribeye. Fix this up at a tailgate party and you’ll quickly find yourself with a long line.
7. Cowboy Quesadilla
All these recipes have me jonesing for Tex-Mex. If you feel the same, here’s one to satisfy your craving. The inside is full of fresh cowboy caviar, BBQ chicken, and Jack cheese. They’re a bit messy, but all the best quesadillas are. Oh, and if you want to make this vegetarian that works, too.
8. Chicken Avocado Quesadillas
I’m salivating just thinking about this recipe. It’s loaded to the brim with a fresh, cheesy, and savory filling. Unadorned chicken won’t do for this meal. It needs to be as full of flavor as the rest of the quesadilla. That’s why you’ll saute the chicken, tomatoes, and peppers together with fajita seasoning. For the cheese, you can use any kind you like. But I tend to go with pepper Jack for this one.
9. Ham and Cheese Quesadillas
These quesadillas are a fun take on ham and cheese sandwiches. They combine deli ham and gruyere for an ooey-gooey sensation. There are also some sliced pickles inside. This is a dinner the whole family can agree upon!
10. Cheesy Avocado Quesadillas
Eating cheap doesn’t mean you have to stick with instant ramen. You can still cook within your budget with these killer quesadillas. They call for pantry staples like canned chiles and refried beans. Then there’s some savory ground beef added to the mix. I admit avocados are a bit splurgy, but so worth the extra buck. However, if they’re not in season, save the money and leave them out.
11. Apple, Ham, and Cheddar Quesadillas
Remember that ham and cheese quesadilla I just mentioned? Well, it got me thinking about this. It omits the pickle for a slice of crisp apple, which is a fun way to touch on even more flavor. Gruyere cheese goes well with this, but slices of cheddar cheese are a far easier route.

Next to breakfast burritos, breakfast quesadillas are one of my favorite things. These get even better because they’re freezer-friendly. Like breakfast burritos, it comes with eggs and cheese. But what makes this super unique is the addition of white beans. These are a powerhouse of nutrients to get energized and geared up for the day.
13. Ultimate BBQ Chicken Quesadillas
Lip-smacking barbecue inside a quesadilla? Now, this is one recipe I can’t pass up. The filling is a savory mix of shredded chicken, black beans, jalapenos, and cheddar cheese smothered in barbecue sauce. Use leftover chicken, and you can have this on the table in less than 30 minutes.

Fried quesadillas are the reason cheat days were invented. Snack or dinner, these crispy quesadillas are one the whole family will love. Go the extra mile and make your corn tortillas from scratch. It really does make a world of difference.

If the grill is calling your name, toss some chicken on for these. In between the cilantro marinade and charred veggies, these quesadillas take everything up another notch. They’re obviously more involved than tossing a cheese-filled tortilla onto a pan. But when the grill is beckoning you, there’s time to wait.

I’m blown away at how incredible these sheet pan quesadillas are! I would go as far as to say these are legendary. It’s like taking a supreme chicken burrito and serving it up quesadilla style. It’s got just about everything including bacon, sauteed veggies, black beans, sour cream, cilantro, and shredded chicken. The only thing you need to add is a side of fresh salsa for serving.
17. Spinach Artichoke Quesadillas
Turn your spinach artichoke dip into a full-on meal with this exquisite three-cheese quesadilla. It will take about 30 minutes and the filling stores well in the fridge. So you can make some extra filling and whip these up again later for a quick meal. Now that I think of it, this will also make an exceptional appetizer for guests. But wait before they arrive to throw everything together. Nobody wants a soggy quesadilla!
18. Cheesy Ground Beef Quesadillas
You can also upgrade your quesadilla game by filling them with savory beef. For seasoning the beef, you need some tomato paste, spices, and spinach. Load up your tortilla and grill until golden brown. Like all the other yummy quesadillas on this list, this one goes well with classic sides like sour cream and guacamole.
19. Shrimp Quesadillas
When I really want to treat myself, I add shrimp to my quesadilla with this easy recipe. The shrimp gets a quick saute with peppers and onions, then layered on with the cheese. It’s very similar to shrimp fajitas, except way more cheesy.
20. Chipotle Chicken Quesadillas
If you haven’t started cooking already, let me suggest one more you’ll want to try. The filling is a savory, smoky, and garlicky mix of shredded chicken and cheddar cheese.
