There’s just something about hot, hearty soup on a cool evening that really does it for me. The amount of ground beef soup recipes out there is seemingly endless.  However, here, I’ve limited myself to 20. These are some of the meatiest, tastiest, and most filling soup recipes with ground beef that you can make. There are several traditional favorites here – from McCormick chili to beefy tomato soup – but there are also some that might be new to you.  If you’re looking for a good place to start, I recommend the easy hamburger soup for simplicity, the beef barley soup for comfort, and the easy meatball soup for heartiness. But why not give them all a try and see which one you like best?

1. Easy Hamburger Soup

Requiring only 10 minutes of prep time and another 25 to cook, it doesn’t get much simpler than easy hamburger soup. It’s dinner for the whole family in a little over half an hour. It’s also incredibly yummy, with succulent chunks of ground beef, tons of mixed veggies, and a garlicky tomato-based broth that’s simply delightful. You can’t go wrong with this one.

2. Quick Vegetable Ground Beef Soup

This herb-flavored soup is a lot like the hamburger soup above, only it takes about 10 minutes longer to make and includes far more veggies.  Thanks to the Italian seasoning, it tastes a bit like minestrone, but the beef adds a rich depth of flavor that you can’t get from any vegetable-only soup. 

3. Cheeseburger Soup

Thick, creamy, and unbelievably cheesy, cheeseburger soup is always a hit with everyone, particularly the kids. There are plenty of herbs and veggies, and there’s the half-pound of ground beef, of course, but it’s really all about the cheese in this one. 

4. Easy Crockpot Taco Soup

If you enjoy soup with lots of chunky goodies in it, you’ll love taco soup. First of all, it’s insanely easy to make because you can toss everything in the Crockpot and let it do its thing.  Additionally, there’s just so much going on in that single pot: pinto beans, ground beef, kidney beans, corn, tomatoes, chiles, and more!  Plus, the combination of taco seasoning and ranch seasoning gives it a phenomenal flavor.

5. McCormick Chili

You can make this thick, hearty McCormick chili with only six ingredients (five if you’re not a beans-in-your-chili kind of person) and just 25 minutes.  Despite the ease with which you can make it, you could definitely enter it into any chili challenge around and have a real shot at winning.

6. Stuffed Pepper Soup

If stuffed peppers are your thing, then you’ll enjoy this soup, which is basically a deconstructed tray of stuffed peppers – peppers, beef, rice, and all! Remember to de-seed the peppers if you’re not a big fan of spicy soups.

7. Beef and Macaroni Soup

With only 10 ingredients and 35 minutes to spare, you can have this family favorite on the table and ready to serve.  It’s beefy and full of veggies. Plus, the teaspoon of Worcestershire sauce gives it a little kick of flavor so good, you actually won’t mind letting it linger on your tongue a while.

8. Cabbage Roll Soup

I mentioned the “deconstructed stuffed peppers” above, but now, let’s take a look at what deconstructed cabbage rolls would look like in soup form. This cabbage roll soup takes 45 minutes to make and uses just a hair over 10 ingredients, and that includes salt, pepper, sugar, and oil.  If you’re not a huge fan of cabbage, don’t let that stop you from trying it. Between the ground beef, onions, garlic, carrots, and more, I’m not sure why they call it cabbage roll soup. The cabbage is only one small portion of what you get with this tasty dish.

9. Lasagna Soup

Lasagna soup, on the other hand, has everything that makes lasagna special: ground beef, tomatoes and tomato paste, a ton of herbs and spices, three types of cheese, and lasagna noodles. If you’d add it to your lasagna, you’ll add it to this soup. It’s lasagna, only in soup form.

10. Easy Meatball Soup

If your Italian meal of choice involves meatballs instead of lasagna, give this one a try. With tender pasta, an almost saucy broth, and fat, succulent meatballs, it’s hard not to love it.  As you can see from the ingredients list, it takes quite a few things to pull together, but most of them are simple kitchen staples, and the total cook time is less than an hour. 

11. Beef Barley Soup

If you’re looking for something that’s filling that’ll remind you of your childhood days, beef barley soup could be just the thing.  It’s a zesty, tomato-based soup with beef, barley, Worcestershire sauce, plenty of herbs and veggies, and lots of chunky little bits to satisfy you. It’s comforting and delectable.

12. Beef and Bean Slow Cooker Soup

This thick soup combines two of every hot-blooded American’s favorites: beef and beans. It takes about 6 hours to make, but your slow cooker does most of the work for you.  And don’t worry, there are plenty of vegetables in the soup, as well. It’s a well-rounded meat-n-veggie dish that tastes spectacular on a cold winter day. 

13. Hearty Italian Vegetable Beef Soup

This hearty Italian vegetable soup is another good choice if you’re looking for something that sticks to your ribs. It’s so thick and chunky that it’s almost a stew, and it’s really good for you. Packed with Italian spices and overflowing with meat, onions, carrots, cabbage, and more, one bowl of this is enough to fill even the emptiest of stomachs.  Then again, it tastes so good that you probably won’t want to stop with just one bowl even if you are full. 

14. Vegetable Beef Noodle Soup

Here’s another excellent option for those of us who love comforting, down-home cooking. It’s a simple soup made with beef, veggies, and noodles. And its simplicity is what makes it so tantalizingly good. It smells great, looks fantastic, and tastes even better. 

15. Cheesy Meatball Soup

Here’s another thick, creamy option for the cheese lovers in your life. It features juicy meatballs, tender chunks of carrots and potatoes, and two different kinds of cheese.  It’s perfect for serving with big slices of crusty bread and maybe even a crisp green side salad.

16. Beef Enchilada Soup

Beef enchilada soup is ideal for anyone looking for something with a little South of the Border flair. It’s a simple 30-minute soup that requires fewer than 10 ingredients (minus toppings). Load it up with tortilla strips, shredded cheese, chiles, chives, sour cream, or even a dollop of guacamole or salsa for an especially tasty treat. 

17. Creamy Potato and Hamburger Soup

This soup is delicious, and it’s both creamy and chunky, light, and filling. It’ll tantalize your tastebuds but won’t leave you feeling overwhelmed or weighed down after eating it.  The potatoes and ground beef complement each other nicely, and because it’s chicken broth-based (instead of tomato-based), it’s easier on the stomach for those prone to indigestion.

18. Beefy Mexican Rice Soup

This soup combines three Mexican staples – corn, rice, and beans – with ground beef, onions, tomatoes, and more for an unforgettable dish that rivals any you’ll get at your local Mexican restaurant.  It takes an hour to make, but it’s relatively simple to pull together, and it’ll keep you full for hours.

19. Beef and Lentil Soup With Vegetables

As long as you like lentils (and aren’t a vegetarian), you’ll appreciate this beef and lentil soup. However, to ensure you make it perfect, you’ll have to get that spice mixture right. You can pretty much adjust the soup and toppings portions of the recipe any way you like, but you’ll want to keep the spices spot-on.  I don’t know how much trial and error the original author went through to get it right, but the spice mixture is what turns this soup into ambrosia.

20. Beefy Tomato Soup

This rich and creamy tomato-based soup is so thick, you could spoon it on bread and serve it like bruschetta. Of course, that makes it the perfect soup to eat from a bread bowl!  Luckily, if you don’t have a bread bowl handy (and don’t want to take the time to make one), it tastes just as incredible on its own.
