1. Tropical Carrot Smoothie

Carrots are a great source of potassium, fiber, vitamin K1, and more, but they don’t have the type of flavor that lends itself to delicious smoothies.  This smoothie, though, also uses strawberries, mangoes, oranges, pineapples, and more, so you get all the carrot benefits with very little of the taste.  If you’re a tropical smoothie for breakfast kind of person, you’ll love this recipe. 

2. Carrot Cake Oatmeal

Putting veggies in your oatmeal may not sound too appealing. However, when those veggies are carrots, and you get to enjoy the rich, sweet flavor of carrot cake for breakfast, that’s another story. It’s thick, hearty, and sweetly spiced. Plus, you can make it the night before and simply heat it up the next morning.

They actually aren’t bad, but I’ve always been more of a pancakes and waffles person than a French toast one.  Still, if you like crunchy, cinnamon-flavored, carrot cake-tasting treats for breakfast, these are your best bet.  Serve them with your favorite dipping sauce – syrup, yogurt, etc. – and get in a full serving of veggies before lunch. 

6. French Grated Carrot Salad with Lemon Dijon Vinaigrette

This tangy salad is more like a carrot coleslaw. To be fair, “French grated carrot salad with lemon Dijon vinaigrette” is quite the mouthful. And this salad does look a little like an orange coleslaw.  It also has that zesty, cool, earthy, and refreshing flavor that coleslaw does so well. Whatever you want to call it, you can’t go wrong with this 15-minute salad. 

7. Roasted Carrot Soup

The first thing you’ll notice about roasted carrot soup is its distinctive orange color. After that, the smooth, creamy texture is usually what catches most people’s attention.  Don’t get me wrong; this soup also tastes fantastic, but that’s only one of the things that makes it so incredible.  It’s a light soup, but it has lots of garlic and herb flavors that’ll linger on your tongue long after you finish the last spoonful. Serve it with a crisp side salad or crusty bread for a hearty, tasty meal.

8. Carrot Muffins

If you like your muffins to have just a hint of crispiness around the edges but plenty of fluffiness and moisture inside, these carrot muffins won’t disappoint.  They’re super simple to prepare and shouldn’t require more than 40 minutes to make a dozen. If you grew up in the late-80s or 90s, you’re probably very familiar with dessert pizzas.
