You know what else, you can eat them any time of day! Break the rules and eat breakfast for lunch or dinner. Start your day with spinach and feta or end it with a Greek delight. No matter when you eat them, breakfast quesadillas are a quick fix for when hunger strikes.

When I say breakfast quesadillas are easy, I mean really easy. This will be your new go-to for the whole family. Part quesadilla, part burrito, and part scramble, this simple breakfast is jam-packed. It has protein-rich pinto beans, fluffy eggs, sharp cheddar cheese, green onions, and fresh cilantro. The only thing I would recommend adding is your favorite homemade hot sauce.

Add it all together in a jumbo tortilla, and it’s breakfast time!

The keto diet and breakfast quesadillas are a match made in heaven. I know what you’re thinking, what about the carbs? But I’ll get to that in a second. Right now, let’s talk about fillings. Packed with fat and protein, this keto breakfast gets a double whammy of meat in the form of breakfast sausage and bacon. Then, it piles on the gooey shredded cheese. To break up some of the richness, you can toss some fresh homemade salsa or other veggies into the mix. As for the carbs, you can skip them thanks to the egg crepe. It not only has zero net carbs, but it’s also made from eggs. See, keto and breakfast quesadillas are meant for one another.

Of all the breakfast quesadillas, this one is the best for brunch with friends. The presentation is as alluring as the quesadilla itself. Then layer it on a tortilla with cheddar cheese. After about 5 minutes, your meal is ready! It’s a quick and easy solution for when you’re feeling ravished. It also cuts down on cooking oil.
7. Vegan Breakfast Quesadilla
Looking to make your breakfast quesadilla vegan-friendly? Not a problem. Ditch the eggs and dairy for a hearty tofu scramble. Turmeric gives it a golden glow while veggies like bell peppers and onions give it a southwest touch. But why stop there? Pile on the hash browns, vegan cheese, and soyrizo. It’s the ultimate breakfast quesadilla and dairy-free! Depending on the brand, soyrizo can be pretty spicy and packed with flavor. So you might need to adjust the ratios accordingly.
8. Greek Breakfast Quesadilla
If you like the Mediterranean breakfast quesadilla, just wait until you try the Greek! Chock-full of veggies, the filling is an aromatic medley of mushrooms, garlic, shallots, and spinach. Meanwhile, the outside gets a topping of olives, cherry tomatoes, and feta cheese. Speaking of cheese, the inside features Dubliner, which is one of my favorites. But you can use any melty cheese you have on hand. This one will take a hot minute to make. So save it for a lazy weekend when you have time to spare.

Coming up with clever ways to get your little tykes to eat their broccoli can be hard. And let’s face it, sometimes you’re not feeling it either. But this is one broccoli rich meal nobody will have a problem polishing off. The inside has a heaping of broccoli and scrambled eggs all oozing with cheddar cheese. And you want to know what else you’ll love? It’s also a simple meal prep idea! Bundle each one up individually and freeze for later. They’ll last a few months in the freezer.
10. Apple Cinnamon Brie Quesadillas
Breakfast burritos don’t all have to be savory, you can make them sweet, too. One bite, and you’ll happily trade in your pastries for a bite of this. Uber creamy brie is the ideal melting cheese. Throw some tart apples into the combination with cinnamon and sugar butter for a sweet delight. If you’re feeling indulgent, add a drizzle of honey. While I never thought I’d say this, you can also top off this quesadilla with a dollop of whipped cream! Extra toppings or not, the kids will love this cinnamon quesadilla, and you will, too.
11. Healthy Breakfast Quesadilla
Quesadillas don’t exactly have a reputation for being healthy. But now they will! Fluffy egg whites and spinach load this quesadilla with vitamins and protein. Add just a sprinkle of cheddar cheese to seal it all up inside. Use a wheat tortilla or go gluten-free, your choice. Want more veggies too? Toss in some slices of tomato and avocado.
